STRAWBERRY SAUCE
MAKES ABOUT 2¾ CUPS
Combining dates and just about any kind of fresh berries is an easy way to make a sweet sauce. The lemon juice preserves the color, balances the flavor, and gives it a bit of a shelf life. Strawberry Sauce is runny when first made and a nice topping for Strawberry Ice Cream; if chilled in the fridge, it thickens, and can be spread on sprouted grain toast.
2 cups strawberries
½ cup dates, pitted and soaked in water 4 hours
1 tablespoon lemon juice
TOOLS: Food processor
• Place all ingredients into food processor. Blend thoroughly.
CHEF’S NOTE: STRAWBERRY SAUCE KEEPS, REFRIDGERATED IN A GLASS CONTAINER, UP TO 4 DAYS.
