<p><strong>MOJO SAUCE<br />
Makes about 1 cup</strong></p>
<p><em>If you’ve lost your mojo, this piquant sauce will give you the motivation to find it. I enjoy this sauce on coconut noodle dishes.</em></p>

<p>½	cup olive oil<br />
½  	cup lime juice<br />
½  	cup orange juice<br />
½	tablespoon orange rind<br />
¼ 	cup fresh cilantro<br />
4	garlic cloves, minced<br />
1      tablespoon jalapeños<br />
½	tablespoon dried oregano<br />
1¼ 	teaspoons ground cumin<br />
¾ 	teaspoon sea salt<br />
¾ 	teaspoon black pepper, freshly ground<br />
TOOLS: High-speed blender</p>
<p>*   Place all ingredients in high-speed blender. Blend on medium until well mixed.</p>
<p>Chef’s note: Mojo Sauce keeps, refrigerated in an airtight glass container, up to 1 day.</p>

Makes 2 ¼ cups</strong></p>
<p><em>Raw nut milks and creams give blended drinks such as Holiday Nog, cereals, and even hot beverages a rich dimension. Almonds are a great base, but you can also experiment with other raw nuts, such as Brazil nuts or macadamias. To extend the beverage, just add more water. Soaking raw nuts is not essential in a pinch, but it releases the enzyme inhibitors and makes the task much easier on your blender. </em> </p>
<p>1 cup almonds<br />
2 cups water, plus more for soaking<br />
¼ teaspoon almond extract<br />
2 dates, pitted</p>
<p>TOOLS: High-speed blender; sieve or cheesecloth</p>
<p>• Soak almonds in water for 8 hours. Drain and rinse thoroughly with fresh water.<br />
• Place almonds and 2 cups water in blender. Blend on high until thoroughly blended; it may take a few minutes.<br />
• Strain through sieve or cheesecloth.</p>

MAKES ABOUT 2¾ CUPS</strong></p>
<p><em>Combining dates and just about any kind of fresh berries is an easy way to make a sweet sauce. The lemon juice preserves the color, balances the flavor, and gives it a bit of a shelf life. Strawberry Sauce is runny when first made and a nice topping for Strawberry Ice Cream; if chilled in the fridge, it thickens, and can be spread on sprouted grain toast.</em><span id="more-662"></span></p>
<p>2	cups strawberries<br />
½	cup dates, pitted and soaked in water 4 hours<br />
1	tablespoon lemon juice</p>
<p>TOOLS: Food processor</p>
